this one i made up years ago when all i had in the house were the main ingredients.
chicken (preferably boiled)
radishes
chives
mayonnaise
salt/pepper
after i make chicken stock, i take the boiled chicken meat and chop it up.
chop about an equal amount of radishes. its best if you have the time to chop them carefully to the same size.
chop up a bunch of chives.
mix all together with just each mayonnaise to coat lightly. salt/pepper to taste. salting this sort of salad is delicate- at some point the flavor will 'come alive' but doesnt taste salty.
toast some whole grain bread and use the chicken salad as filling for sandwitches.
the mayo and the radishes go together like magic, and the soft chicken and crunchy radishes are great texture. the strength of the radishes is put out by the mayo and chicken.
ps its called mexican chicken salad because of the colors.
