| Audacity can record the interviews as audio files, and then later play
| them back so that a human being can transcribe them to text. It can also
| slow down the audio so that it is easier to perform the transcription.
If you want to use Audacity to slow down the audio of your interviews, your
best choice is to use Effect > Change Tempo, which will slow the audio down
without changing the pitch so making it easier to understand than if you simply
changed the speed with Effect > Change Speed. Any effect will modify the
audio, so you would have to Edit > Undo the effect if you wanted to export the
audio files from Audacity at normal speed. If you use the Beta 1.3.3 version of
Audacity, this has a special variable speed slider with which you can adjust the
playback speed immediately without modifying the audio, although this does
alter the pitch as well as the speed.
