Is there some tutorial on how to tile GeoTiff raster files and use pyramid tools
to render large GeoTiff raster files in GeoTools?

There is one for storing tiles in a jdbc database

Ciao,
as a rule of thumb, I would not cut a geotiff in small pieces.
All you need to do is:

1> rewrite it down with proper tiling and compression (if it applies
to your use case)
2> add overviews, as an instance with gdaladdo.
