Hey I'm having problem with my image field in a custom content type. Uploaded Jpegs look wrong, color is faded and the image looks stripped. Gifs and Pngs look fine it is just a problem with Jpegs.

The images are being resized so im thinking there may be the problem with the resizing. It reminds me alot of an php problem i had with adding slashes to imaging content. and not removing them. . But im not certain.

Any information on how to fix this would be great

I have the same problem. My configuration is
    * OpenSuse 11, 64bit,  
    *  Plone 3.1.7
    * CMF 2.1.1
    * Zope (Zope 2.10.6-final, python 2.4.5, linux2)
    * Python 2.4.5 (#1, Dec 8 2008, 13:21:22) [GCC 4.3.1 20080507 (prerelease) [gcc-4_3-branch revision 135036]]
    * PIL 1.1.6

Are there any known issues?

Plone uses Python Imaging Library for most imaging fuctionality. http://www.pythonware.com/products/pil/

Python imaging library relies on various native libraries available on your operating system.

I suggest you create an isolated test case: a little Python script which opens the image file using PIL, resizes the image, saves the result. Only with this kind of isolated test case you can report the bug to upstream. 

On the other hand it might be that you have bad version of some native libraries and the bug can be fixed by upgrading your operating system libs.

Please also follow instructions http://plone.org/help asking for help. Your post lacks crucial information like operating system and Plone version.
