I used to love doing various things with applesauce and oats. I can't eat oats as much, now, though.
None of these methods involve cooking. Cooking will cause the oats to absorb the applesauce (and the flavor) and likely cause a mushy, hard to eat, glob of stuff.
Anyway, traditionally, people will take applesauce, and add some oats - plus sometimes raisins and cinnamon - mix it all together, and eat it. It's pretty good. I'm not sure where this tradition is from, but I think it's either the northwestern United States or northeastern England.
I made a new variant on this, which is quite more satisfying to the stomach (it feels like a more complete meal, to me, anyway), but it is a little more controversial as far as the flavor goes (I like it a lot, myself): Applesauce, pineapple, and oats. Don't let it refrigerate before eating. The pineapple and applesauce combination seems to cause a strange reaction over time - perhaps it ferments more quickly or something. Plus, letting this sit, with the oats in it, will make the oats soggy. You won't like it as much soggy, I'm sure (another reason not to cook it).
If you have high cholesterol, this is a great thing to try, due to the soluble fiber in oats. If you have low cholesterol (most people shouldn't have to worry about this), it could be detrimental to your health (particularly your skin). It doesn't matter whether the oats are quick or old fashioned.
So, I like to call it Chinese Porridge (simply because of the pineapple, and not any real relation to China - though I did love eating it with chopsticks; I prefer it with the non-Chinese style pineapple, though, myself; it's not porridge, by definition, though, as it's not boiled).
